| Abstract:In this study, composite nanoparticles were fabricated using Zein, carboxymethyl cellulose (CMC), and pectin (Pec) as raw materials to stabilize oil-in-water Pickering emulsions. The effects of binary and ternary composite systems on emulsion stability and their delivery behavior of epigallocatechin gallate (EGCG) under simulated gastrointestinal digestion were systematically investigated. The results demonstrated that the incorporation of CMC and Pec significantly enhanced the dispersion stability of zein nanoparticles. Specifically, at the optimal mass ratio of zein to CMC of 1∶1, the nanoparticles Zein/CMC/Pec exhibited the most uniform morphology. The Pickering emulsion stability by these nanopartides smallest droplet size and the most stable interfacial adsorption structure, effectively modulating the hydrophilic-hydrophobic balance. The results of in vitro simulated digestion revealed that the Pickering emulsion effectively suppressed the burst release of EGCG in the gastric phase. Notably, during the intestinal phase, the EGCG retention rate in the Pickering emulsion remained stable at a high level of 54%~59%, whereas that of free EGCG plummeted to approximately 8%. This Pickering emulsion possesses superior structural stability and pH-responsive staged release characteristics, offering a promising carrier strategy for the stable delivery of polyphenolic functional factors. |
